Here is an excellent food choice for a heart-healthy diet, one of my favorites.

Roasted Salmon and Mango Salsa With Toasted Harvest Grains

(Serves 2)

(2) 6-8oz. Salmon Filet (Center Cut)

2 tsp. Extra Virgin Olive Oil

2 tsp. Lemon Juice

½ tsp. Fresh Thyme

1 tsp. Minced Garlic

Salt and Pepper to Taste

Pre-heat oven to 425 F.

Rub Salmon with oil, lemon juice and spices, roast 15-18 minutes and serve with Salsa

Mango Salsa

(1) Small Mango

½ C. Diced Pineapple

2 T. Chopped Red Onion

½ C. Chopped Red Pepper

2 T.  Chopped Jalapeno

1 T. Fresh Mint

1 T. Fresh Cilantro

Combine all ingredients in bowl and set aside

Toasted Harvest Grains 

1 ¾ C. Chicken Broth

1 T. Extra Virgin Olive Oil

1 ¼ C. Harvest Grains Blends (Israeli Style Couscous, Orzo, Baby Garbanzo Beans, and Red Quinoa)

1 Clove Minced Garlic

2 Chopped Scallions

2 T. Chopped Chives

Zest of 1 Lemon

Toast Harvest Grains in sauté pan (5-10 minutes).  Bring 1 ¾ C. chicken broth to a boil, add Extra Virgin Olive Oil, garlic, scallions and Grains Blend to chicken stock, bring back to boil, reduce heat and simmer, cover for 10 minutes.  Finish with chopped chives and lemon zest.
